Posh Homemade Fish and Chips

We love this with halibut or lemon sole fillets for this recipe, but just ask which fish is good that day, we’ll be happy to advise

Season some flour with salt & pepper, lightly dust the fish (by lightly pressing it into the flour)
Shallow fry in a hot pan for 1-2 min’s depending on the size of the fillet
For good & fairly healthy chips; chip & par boil a good new season potato (we like them with the skin left on) drain well, place on a good non stick oiled baking tray & bake in a moderate oven for 15-20 min’s until golden brown
