Salmon Saltimbocca (Italian Style)

This recipe was passed on to us by Catherine a customer of ours, she found it and adapted it from “tasteitalia” magazine.

 

Catherine bought a tail end of fresh salmon and had us thinly cut it as we would hand-cut our smoked salmon.

 

This is the method she used:

  • The salmon needs to be marinated for an hour or so in lemon juice olive oil and fresh thyme.
  • Seasoned.
  • Then put slice of smoked salmon on top of the salmon and roll tightly.
  • The recipe intended it to be served as a whole piece but I cut mine into bite size pieces.
  • Secure with cocktail stick. Fry in butter for 2-3 minutes.
