Fishes of the Week
Northumbrian and Whitby Locally Day Boat Caught:
Sea Bass - Lightly season and cook on a hot BBQ for 3-4 minutes until the flesh goes opaque absolutely gorgeous
Line Caught Tuna - Fabulous cooked on the BBQ, don't overcook this beautiful fish make sure you leave it a little pink in the middle.
Swordfish - Another great fish to do on the BBQ, try marinating in a little oil with lemon/lime zest and fresh coriander
Farmed Organic Shetland Salmon Fillets - Again cooks amazingly well over the hot coals of the BBQ, don't overdo it leaving the flesh juicy and moist
Cornish Sardines Whole and Filleted - Guess what you can BBQ these too! Roll and skewer the fillets with chopped tomatoes, shallots, pine nuts and fresh basil - scrummy.
Raw Tiger Prawns in all sizes - go Aussie and chuck another shrimp on the barbie!
